At Firebox Restaurant, the philosophy is simple: the best food travels the shortest distance from farm to table. Executive Chef Sean Farrell prepares locally sourced foods from a seasonal menu, like the Four Mile Farm Burger with house-made pickles (Firebox pickles and preserves its own year-round farmer’s market offerings!). Ninety percent of Firebox’s menu comes from local sources, and anything not local is sustainable. Firebox is part of Billings Forge Community Works, a nonprofit organization that supports Hartford’s (and Trinity’s) Frog Hollow neighborhood through job training (40 percent of Firebox employees are from Frog Hollow), economic investment, education, and programming that is a catalyst for change in the community.
