ESRI Courses:
ESRI courses are great places to go to hone skills, and to go back to for reference later. They are not necessarily the best place to go when you don't know what to do about a particular project, but a great way to learn specific extensions, skills, etc. Not all ESRI courses are free, but a few are, including two introductory ones (useful for recaping things learned in this tutorial, and perhaps for students – quizzes are included and can be used as grades, for instance) and an introduction to Geostatistcal Analyst (an important set of tools for any GIS projects requiring advanced statistical calculations - particularly useful for interpolation).
